It consists in the fact that grapes are not harvested immediately after ripening, but give it a little overripe and wilt. Fruits are dehydrated, they create a higher concentration of acids, sugars and polyphenols, and in wines from such grapes – new rich tints of taste. Such wines are more persistent and durable.
Deep ruby color. Intense tones of dark, juiciness of red fruits and spices. In the mouth a combination of plums, blueberries, blackberries, cherries and chocolate. Beautiful full and velvety wine with pleasant juiciness and a very long finish. The grapes are lightly dried by the Apulian sun. The wine matures only in a stainless steel tank.
